All hard pork sausages come from the lean meat of Iberian pigs fed on acorns in season; they spend the remainder of their lives in stables feeding on natural fodder until they are slaughtered. This is the main difference between the acorn-fed Iberian pig and the cereal-fed Iberian pig.
